Conrad's Birthday Supper

In the rush of yesterday's packed day, I didn't make Conrad's traditional birthday supper yesterday. I decided that since Kaden did NOT have volleyball after school today (this may be only the second time since school started) that I would surprise Conrad with his favourite meal instead of heading out like we usually do on Friday nights.

Here's Conrad's favourite chicken cordon blue ...it's kind of a lazy version but it is his favourite!



DIRECTIONS

  1. Use a meat pounder to flatten the chicken breats.
  2. Place 1 slice of ham and 1 slice of cheese in the center of each breast.
  3. Roll up and place seam side down in a casserole dish.
  4. Securing with a toothpick if necessary.
  5. Bake, covered, for 20-30 minutes at 350 degrees or until the chicken is no longer pink and juices run clear.
  6. While it is baking, mix together remaining ingredients.
  7. Pour over cooked chicken and bake until sauce bubbles.
  8. I usually serve with noodles.
*for an even lazier version, lay ham and cover with a slice of cheese over chicken and bake until chicken is cooked and cheese is melted. Pour on sauce (make sure it isn't too cold to break the glass pan!)  and then bake until bubbly.
